Black and white truffles



Chocolate in all its forms is a certainly a specific field of pastry making, and therefore deserves to be called a field of its own

While making chocolate bonbons remains technical and time-consuming, the chocolate pleasure can be achieved with a simple truffle recipe.


Truffles, yes, but in two colours and flavours in order to satisfy different tastes. For lovers of strong chocolate, truffles with dark chocolate and cocoa powder. For those who prefer sweet bites, white chocolate and coconut truffles.


This recipe is very easy to make and has only three ingredients per truffle. The important point here is the resting time of the ganache. If possible, the ganache should be made the day before. Otherwise, it should be left in the fridge for at least 6 hours.




Ingredients

Dark chocolate truffles

  • 100 g dark chocolate, 2/3 cup

  • 90 g heavy cream, 1/2 cup

  • Cocoa powder, 1 1/2 cups

White chocolate truffles

  • 80 g white chocolate, 1/2 cup

  • 30 g coconut powder (A), 1/2 cup

  • 50 g heavy cream, 1/4 cup

  • Coconut powder (B), 1 1/2 cups

How To

Dark chocolate truffles

  • Bring the cream to the boil.

  • Melt the chocolate in a double boiler or microwave.

  • Add the cream three times to the chocolate while stirring.

  • Cover the ganache with cling wrap on the surface and set aside in the fridge overnight.

  • Make balls of ganache and cover with cocoa powder.

White chocolate truffles

  • Bring the cream to the boil.

  • Add the cream three times to the chocolate while stirring.

  • Add the coconut powder (A) and mix.

  • Cover the ganache with cling wrap on the surface and set aside in the fridge overnight.

  • Make balls of ganache and cover with coconut powder (B).
