Caramel French Toast

Made with brioche toast and a caramel topping, this treat is simply great as a breakfast option with a cup of coffee or black tea. The french toast can also be decorated with some fruit to balance the sweetness and add some vitamins to the dish.

And the best part: this french toast is so easy to make and only takes a few minutes to bake.


Caramel Topping

  • 50 g sugar (1/4 cup)

  • 20 g butter (1 1/2 tbsp)

  • 130 g heavy cream (3/4 cup)

  • A pinch of salt


  • 93 g full fat milk (1/2 cup)

  • 266 g heavy cream (1 1/2 cups)

  • 60 g egg yolks (3 eggs approx.)

  • 38 g brown sugar (1/4 cup)

  • 1 tsp vanilla paste or extract

How to

Caramel Topping

  • Cut the butter into small squares.In a saucepan over low heat, add about three tablespoons of sugar.

  • Wait until the sugar starts to melt and start adding it little by little.Meanwhile, heat the cream in the microwave.

  • Once the sugar is completely caramelised, add the hot cream little by little while mixing. Be careful, this is a dangerous step because there may be projection of hot caramel.

  • Add the butter squares and mix until completely incorporated. Pour into a bowl or baking pan and let cool in the fridge for 30 min.


  • Mix the milk, and vanilla together and bring to a simmer. Let it cool for a few minutes.

  • Whisk the sugar and eggs together. Pour in the milk and cream mixture.

  • Soak brioche slices in the mixture. Place on a napkin and then grill in a pan until golden brown.

  • Optional: place the french toast in the oven at 180°C/360F for 5 min.

  • Pour caramel topping before serving.
