Cream Puffs (chouquettes)

  • 62 g milk, 1/4 cup

  • 62 g water, 1/3 cup

  • 7 g honey, 1 tsp

  • A pinch of salt (approx. 2g)

  • 55 g butter, 1/4 cup

  • 75 g flour, 2/3 cup

  • 100 g egg, 2 units

How To
  • Put the water, milk, butter, salt and honey in a saucepan and bring to a boil.

  • Remove from the heat and add the flour. Then, over medium heat, stir until the dough is well incorporated.

  • Stir for a few minutes so that the steam escapes.

  • Remove from heat and place in a bowl. Let cool for a few minutes.

  • Add the eggs little by little and stir each time until the dough absorbs all the eggs. The dough should be smooth and shiny.

  • Put the dough in a piping bag and pipe 3 cm cream puffs on a buttered baking tray.

  • Preheat the oven to 180°C and bake for 45 minutes.

  • Remove from the oven and let cool.
