Looking for a healthy snack that you can whip up and bake easily ? Try these blueberry muffins!
Whether you are looking for a savoury breakfast or an afternoon snack, these muffins are the go to option.
As with all baking recipes, the quality of the end product will depend on ingredient quality. So for these muffins I recommend using organic blueberries if possible. The mixture of components in this recipe is focused on creating a balance between natural and basic products such as oats, honey and fruit. The number one rule is to use ingredients that you enjoy and like.
Since I love peanut butter, I used it as a substitute for regular butter. But if you don't like it or don't want to use it you can also substitute it with coconut oil. Also as a sweetener I use honey but you can use maple syrup instead.
When you've made the muffin batter, you can also add chopped nuts or coconut powder to add an additional flavor. If you aren't a huge fruit lover, this muffin recipe works well with chocolate chips.
To serve these muffins, I chopped some fresh fruit to put on the side. Also, you can use any jam or jelly of your liking as a topping for the muffins.

160 g quick oats, 2 cups
440 g boiled water, 2 cups
130 g honey, 1/2 cup
1tbsp vanilla extract
1 tsp baking soda
1/2 tsp cinnamon
A pinch of salt
140 g peanut butter, 1/2 cup
Blueberries to taste
In a bowl, add the oats and pour in the boiling water. Let soak for 15 min
Mix together the wet ingredients: honey, eggs, vanilla extract and the peanut butter.
Once the oats have soaked, add the salt, baking soda, and cinnamon.
Mix the wet ingredients with the oats.
Add the blueberries and mix.
Preheat the oven at 180 °C. Pour the mixture in the muffin tray and bake for 30 to 40 min or until golden brown.
Let cool for 15 min in the oven before taking the muffins out.
Let rest for at least an hour before serving.
