What's up foodies, today I'm sharing with you one of my childhood recipes: honey coconut mini donuts.
This delicacy is made with a dounut dipped in honey and generously covered with coconut powder. Although the honey-coconut combination is not very common, this sweet treat definitely stands out.
A crunchy outside and a crumbly inside, a sweet and light flavour, this is what to expect when making these honey coconut donuts.
With a sober but attractive look, you will appreciate these donuts because their preparation is very easy. They also stay very yummy at room temperature in an airtight container. You can therefore make a large quantity and then store it or share it with your family and friends.
The first step of making these donuts is a dough that is fairly simple to knead. You will then need to use two cookie cutters, one small and one large, to cut the desired shape. Once the donuts have been cut out, you will have to put them in a frying bath to cook them. Finally, the donuts must be soaked in honey and then covered with coconut powder.

Two cookie cutters (5 cm, et 2 cm Ø)
A rolling pin
250 g flour
60 g vanilla yoghurt
30 g sugar
5 g baking powder
1/2 beaten egg
100 g melted butter
Start by whipping together the sugar and egg. Add the melted butter and mix.
Add the yoghurt and mix. Sift the flour and baking powder and mix until incorporated.
Form the dough into a ball and let it rest in the fridge for 10 minutes.
Roll out the dough with a rolling pin to a thickness of 2 to 3 mm.
Cut out circles with the large cookie cutter, then cut out a smaller circle in the centre of each donut.
Prepare a frying bath and fry the donuts until golden brown.
In the meantime and as soon as a donut is fried, soak in honey and then cover with coconut powder.
Let cool for a few minutes before serving.
