Strawberry Matcha Cupcakes
Cupcakes are definitely the go option for a quick and super delicious dessert. So as a new spin on this classic, I chose the matcha and strawberry flavour that I find go very well together. The cupcakes are matcha flavoured and then filed with some homemade strawberry jam.
To top off all this deliciousness, I chose a flower shaped frosting that is made with a strawberry buttercream.

Ingredients
Strawberry jam
70 g strawberries (1/2 cup)
1/2 tsp agar agar
10 g sugar (1 tbsp)
Matcha cupcakes
125g flour (1 cup)
1/4 tsp baking soda
60 g sugar (1/3 cup)
125g soft butter (2/3 cup)
2 large eggs
1 1/2 tbsp milk
7 g matcha powder (1 tbsp)
Frosting
270 g icing sugar (2 1/8 cups)
180 g butter (1 cup)
Strawberry extract - to taste
A pinch of salt Salt
Pink food colouring
How To
Strawberry jam
Mix the strawberries until they are pureed. Then bring to a boil.
Mix the sugar and agar agar. Add the mixture to the strawberry puree and stir.
Let cool in the fridge until set.
Matcha cupcakes
In the bowl of a stand mixer, place all the ingredients except the milk.
Mix at medium speed until combined, then reduce speed and add in the milk.
Mix for approximately 1 minute then stop the mixer.
Place the batter in a cupcake mould and bake at 170°C/340F for 20 minutes.
Let cool at room temperature before filling with jam.
Frosting
In a stand mixer fitted with the paddle attachment, mix the soft butter for 5 minutes until it becomes light in colour.
Add the sugar and mix.
Add in the food colouring and flavouring and mix some more.
Place the frosting in a piping bag with a piping tip.
Assembly
Cut off the top of the cupcakes and carve a hole inside.
Pour the jam inside the cupcakes.
Top off with some piped frosting.
