Vegan Granola

Granola is an essential component of every delicious breakfast. For me granola is best when it's mixed with some chocolate chips or some fresh fruit.

To try something new, I wanted to go for a vegan take on granola with some grilles cashew nuts and coconut. You can totally customize this recipe and add in some walnuts or any other nuts of your choosing.

The best part is that this recipe is so easy, and you can store it for some time in an airtight container.

  • 95 g oats, 1 cup

  • 70 g grilled cashews, 3/4 cup

  • 30 g coconut, 1/2 cup

  • 20 g brown sugar, 1/4 cup

  • 40 g maple syrup, 3 tbsp

  • 15 g veg oil, 2 tbsp

  • A pinch of salt

How To
  • Mix the oats, grilled cashews and coconut together. Set aside.

  • In a saucepan, mix the maple syrup, vegetable oil, sugar and salt. Bring to a boil and pour in a container to stop cooking.

  • Pour the syrup over the dry ingredients and mix well.

  • Preheat the oven at 120° C (250 F) and bake for 1h20min. Stir the granola every 20 minutes for an even result.

  • Once baked let cool at room temperature and store in an airtight container.
